600g Black Pudding
Almost every culture around the world has their own version of Black Pudding, from Chile's Prieta to Poland's Kaszanka, and there are regional differences in black pudding even within Scotland. Our Marag dhubh is made to a traditional West Highand Recipe, so peppery but with less of the sweet spices like cloves and mace. The only grain used is oatmeal, the texture is fairly firm and the slices hold their shape well when cooked. We use fresh onions and fresh pork fat and beef suet in our black pudding, as opposed to dry, which we think results in a superior tasting and textured Black Pudding.
