West Highland Black Pudding

Almost every culture around the world has their own version of Black Pudding, from Chile's Prieta to Poland's Kaszanka, and there are regional differences even within Scotland. Our Black Pudding is made to a traditional West Highand Recipe, so peppery but with less of the sweet spices like cloves and mace. The only grain used is oatmeal, and the texture is fairly firm and the slices hold their shape well when cooked. We use fresh pork fat and beef suet in our black pudding, and sell in 600g or 1kg sticks.
